Pie of the Month: Coconut Cream

Dad is the baker in the family, so it is only fitting that he make me a birthday treat! While I like cake, I would much rather have PIE! This year's choice was a Coconut Cream Pie.
It was D-E-L-I-S-H!!! Thanks Dad!! :O)




Here's the recipe:

COCONUT CREAM PIE

3/4 cup sugar
1/3 cup flour or 3 T. corn starch
1/4 t. salt
2 cups milk
3 slightly beaten egg yolks
1-1/3 cups flaked coconut
2 T. butter
1 t. vanilla
1 9-inch baked pastry shell

*Meringue

In saucepan, combine sugar, flour or corn starch, and salt; gradually stir in milk. Cook and stir over med/high heat till bubbly. Cook and stir 2 minutes. Remove from heat. Stir in moderate amount of hot mixture into yolks; immediately return to hot mixture; cook 2 minutes, stirring constantly. Remove from heat. Add butter, 1 cup coconut, and vanilla. Pour into cooled baked shell. Spread with meringue, and sprinkle with 1/3 cup coconut.  Bake at 350 degrees for 12-15 minutes.
