Peanut Butter Brownie Trifle Dessert

I made this easy, yummy, dessert while the kids were home for Easter weekend.
It was definitely a hit!

~Peanut Butter Brownie Trifle Dessert~

  1. 1 fudge brownie mix (13 x 9 inch pan size)
  2. 2 packages (13 ounces each) miniature peanut butter cups
  3. 4 cups cold 2% milk
  4. 2 packages (5.1 ounces each) instant vanilla pudding mix
  5. 1 cup creamy peanut butter
  6. 4 teaspoons vanilla extract
  7. 1 cartons (8 ounces) frozen whipped topping, thawed

Prepare brownie batter according to package directions.  Bake in a greased 13-in. x 9-in. baking pan at 350° for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not over-bake).  Cool on a wire rack; cut into 3/4-in. pieces.  Cut peanut butter cups in half; set aside 1/3 cup for garnish.  In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick).  Add peanut butter and vanilla; mix well. Place a third of the brownies in a glass trifle bowl; top with a third of the remaining peanut butter cups. Spoon a third of the pudding mixture over the top. Spoon whipped topping on top of pudding mixture. Repeat layers twice. Cover with remaining whipped topping; garnish with reserved peanut butter cups. Refrigerate until chilled.

Pioneer Woman: Maple-Bacon Scones

For April's recipe, I picked these yummy (and they were YUMMY) Maple-Bacon Scones! :O)

  • 3 cups All-purpose Flour
  • 2/3 cups Sugar
  • 5 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 2 sticks (1/2 Pound) Unsalted Butter, Chilled And Cut Into Pieces
  • 1 whole Large Egg
  • 1 cup Heavy Cream
Preheat oven to 350 degrees.

Sift together flour, sugar, baking powder, and salt.

Mix cream with egg.

Use a pastry cutter or two knives to cut the butter pieces into the flour. Keep going until mixture resembles crumbs. Mix wet mixture with flour mixture; stir gently with a fork until combined. Mix should be crumbly, but if it's too crumbly to work with, splash in a small amount of heavy cream.

Turn dough onto a floured surface and lightly press it together until it forms a rough rectangle. Use a rolling pin to roll into a rectangle about 1/2 inch to 3/4 inch thick. Use your hands to help with the forming if necessary. Final rectangle should be about 18 inches by about 10 inches.

Use a knife to trim into a symmetrical rectangle, then cut the rectangle into 12 symmetrical squares/rectangles. Next, cut each square/rectangle in half diagonally, to form smaller triangles.

Transfer to a parchment or baking mat-lined cookie sheet and bake for 18 minutes, removing from the oven just before they start to turn golden. Allow to cool for 15 minutes on the cookie sheet, then transfer to a cooling rack to cool completely.

(I halved the recipe/ made 12 scones)

To make the icing, ix powdered sugar with the milk, adding more powdered sugar or milk if necessary to get the consistency the right thickness. Add maple extract (I used maple syrup) Stir or whisk until completely smooth. Drizzle over scones and top with crumbled bacon. I love the mix of flavors, the buttery scones, the sweet maple icing, and salty bacon....YUM!!!!!

Cotton Candy / Ice Cream Party Favors

We did these cute party favors for Kamry's 1st Birthday party! Super easy, but so cute!! Her party didn't have a theme, just pink and girly with a little sparkle, so the pink cotton candy fit in perfectly.

All you need: cones, clear favor bags, pink baker's twine, and of course, some pink cotton candy!!
You can pre-make a day or so ahead of time and it stays fresh.

Stitch Fix #6 - April 2017

Stitch Fix #6 - April 2017

I love getting this happy mail every month! It's so exciting not knowing what's inside that box!

At first glance, the colors didn't wow me....kind of boring....mauve and mint green...hmmm?!

Here is a better look at the 5 items I got......

(1) Moda Luxe South Hampton Tote - $58.00

I've been asking for a purse and while I love the style and size, I really didn't care for the minty green color. [Return]

(2) Pistola Moriah Straight Leg Pant - $78.00

I really liked these pants for spring/summer. They fit well, BUT, (a) they are mauve, and (b) they cost 78 bucks!! [Return]

(3) Brixon Ivy Pinson Drape Cardigan - $54.00

I got a similar cardigan a few months ago that I kept, so this one went back. It was a little "older" looking I thought too. [Return]

(4) Fun2Fun Willow Lace Detail Blouse - $48.00

I feel like I owned a top like this YEARS was just o.k....[Return]

(5) Daniel Rainn Samina Tulip Sleeve Blouse - $64.00

This was the item that I loved most in this fix. I loved the fit, the sleeve detail (which I didn't capture very well in this pic), and the colors/print. It looked good with the pants too, but I thought it was just too expensive. [Return]

Thoughts: This month, for the first time, I kept nothing. I really wanted to keep the tulip sleeved blouse, but just couldn't justify spending $64 for it. I hate to lose my $20 styling fee, but think that might happen once in a awhile, because I don't want to buy something just to be buying it. When I signed up, I decided I wasn't going to buy things I didn't intend to wear, or spend too much on an item that I could get somewhere else much cheaper. I really love the quality of the clothes and that my stylist, Litsa, puts so much thought into what she sends me. She mentioned having trouble accessing my style board on Pinterest, so I will re-link that before my next fix!

I am still loving Stitch Fix and get very excited when my monthly box arrives!!

Happy 1st Birthday!!!!!

  • Mommy....Daddy....Peppa(George)...this pretty much sums it up! Kamry thinks Daddy is hilarious! She has inherited his adventurous side and is a "social butterfly" just like him. Already, when they are at a restaurant, she is stretching her neck taking everything in or coying people over to their table with that sweet smile! And then there's Momma! They are buddies. They have literally spent every day together since the day she was born. Kamry's content, calm, sweet side shines brightest when Mommy is around! Total devotion has brought Kamry to where she is today! This 2 lb. 12 oz. little girl had a rough and scary entrance into this world, but from the minute she was born she has felt nothing but love, happiness, and security from her parents, family, friends, and even her favorite pig, Peppa! We love you so much sweet Kamry and wish you the Happiest 1st Birthday ever!!!
