ORANGE-BLUEBERRY MUFFIN TOPS

I got Pioneer Woman's new cook book [The Pioneer Woman Cooks: Come and Get It] for Christmas and I will be doing another try-a-new-recipe per month challenge again this year.

I started with Orange-Blueberry Muffin Tops and they were yummy!!

Ingredients:

1 cup fresh blueberries
1-1/2 cups flour
1-1/2 sticks butter - softened
3/4 cup sugar
1 large egg
3/4 tsp. baking soda 
1 orange
3/4 cups buttermilk
1 cup 10x sugar

Daily Reading Through The Bible - 2018

I have started reading through the Bible many times, but after a few books of the Old Testament I'd lose interest or get behind and just give up. Back in September, I joined up with Bible Plans on Instagram for a daily-read-through-the-Bible-challenge for 2018!

We started in GENISUS on September 5, reading one chapter per day. 

Hebrews 11:3 By faith we perceive that the systems of things were put in order by God’s word, so that what is seen has come into existence from things that are not visible.

"Behold, I am with you and will keep you wherever you go, and will bring you back to this land; for I will not leave you until I have done what I have spoken to you.” (Genesis 28:15)

We finished Genesis up on November 10th, and then went over to the LUKE in the New Testament.

Luke 11:9

 We finished that up on December 14th. I skipped the 10 day Fruits of the Spirit group devotional over Christmas, but picked back up again with reading EXODUS beginning on December 26th.

Exodus 14:14 - The Lord will fight for you, all you need is to be still. Love love love!!

As of today, we have read through Chapter 27.....

I'm excited to see if I can stick to this and actually read through the entire Bible....finally!

Home Chef Review: Crispy Onion Chicken


Crispy Onion Chicken
w/ Creamy Mushroom Sauce & Green Beans


-INGREDIENTS-

6 oz. Cremini mushrooms
8 oz. green beans
1 oz. crispy onions
2- boneless, skinless chicken breast
1 T flour
4 oz. light cream

It still amazes me how the meals in subscription boxes turn out so tasty with so few ingredients. This recipe only included mushrooms, green beans, crispy fried onions, flour, cream, and 2 chicken breasts, but was so yummy! 

It pays me to get these meals....6 meals for a little over $30! I don't like paying full price, so I wait for a discount. I am also going to search for a few more that I haven't tried yet, as you always get some kind of new customer discount. 

All 3 of the meals this shipment were easy to make, and full of flavor. I have two meals for the next two days already cooked [another steak dinner and another one from today]. That gives me a few days off from cooking yet I'll have a yummy dinner! Another plus of doing these meals [for one].

We went for a visit at Pop & Gran's house.


This was a great week for them too! 
They really loved spending time with the great grands and having the family around!

Tonight for dinner, I made Salisbury Steak w/ Gravy, Asparagus Bundles, Rice, and Rolls.

I didn't take pics, but here is the recipe for the Salisbury Steak (fed my family of 6)...

2 lb. ground beef
1/2 cup bread crumbs
2 T ketchup 
1 T Worcestershire sauce
2 tsp. mustard
1/2 tsp garlic powder
salt & pepper

Make patties and cook thoroughly. I cooked them on my griddle 
and added them to the gravy at the end. 

-GRAVY-
In a skillet, saute 1 large onion (sliced) in olive oil and butter until tender. Add mushrooms (sliced), 1/2 tsp. garlic powder, 1 T Worcestershire sauce,  3 cups beef broth (I use hot water + bullion cubes), salt & pepper. Thicken with corn starch. 

Add patties to gravy and simmer until ready to serve.

I found this recipe a few years ago, and it's a family favorite!!
[The only thing I do differently is cut the bacon in half instead of wrapping with a whole strip. I do 3 or 4 pieces of asparagus per bundle.]

After breakfast, we went out in the yard with Daddy and Pop Pop.

Kayla and Rowen came down and she made her Dad a Red Velvet Cake for his birthday (she's already made another one--DELISH--yaaa! a baker in the family!!) :O)

Liv and Weston stopped by for a little visit.

My morning quiet time with Kamry has been the best! Kamry's schedule has changed a bit over the last month or so and she now gets up around 8:00 (was sleeping until 10 or 11) so it was a nice break for Lindsey to be able to sleep in while she was here. I loved having those hours with her every morning. I try to limit the tv watching, but she loves getting my iPad for me to find Peppa for her and looking at pics and taking selfies! LOL


She didn't eat much this morning for breakfast, so we made Strawberry Smoothies 
which she gobbled down!



Kayla and Rowen came down for the day. Logan was hunting again.

Peter left on the evening boat to go back to work. :O(
Logan was hunting late so we ordered out for dinner tonight! 

I was sad that it was their last night here!!!

I spent one last morning with Kamry. 





Gran and Pop came down, 
and I got Rowen for awhile.

Nathan was headed home today. He just missed their visit, but they did see each other on the dock when the boat got there. He also FaceTimed! :O)




They left on the evening boat, and while I was sad they were leaving, they left me with lots of good memories from our week together. I enjoyed every minute of our time together. We just hung out and relaxed and just enjoyed being together. No clocks, no phones, no schedule, nothing but time.....to me that's priceless! <3 <3 <3

*winter visit // part one*

Logan, Lindsey, and Kamry had been planning to come home for a winter visit. Logan wanted to do some hunting and other than that they had nothing planned but to relax and enjoy a little time on TI with the family. I got super-nervous during the freeze-up a few weeks ago, that they might not get here due to weather or that the boats might not be running on schedule. Then, another glitch popped up when Nathan's work schedule got messed up and he wouldn't be home while they were here. :O(
(He ended up working on Logan's boat a few days so they did actually get some time together, but would have LOVED to have had everyone home).

We decided to go over Thursday morning to get groceries, the day they were coming over. There was ice in the creek again but the mailboat left on time. We got as far as Port Isobel when we got stuck in the ice!! We were delayed 90 minutes when another boat came out and picked us up and took us to Crisfield. It was very windy too and I was worried that they might have to put their visit off another day. Since we had been delayed, the boat stayed longer and we didn't leave until 2:00. By then, the wind had dropped out and it was nice enough for them to come back with us.

It was late in the day, so we hung out at home. Kayla and Rowen came down and we all had dinner together. Peter broiled some oysters and we pulled out the deep fryer and did fried shrimp, clam strips, chicken tenders, and fries with homemade cocktail sauce and other dipping sauces.

I had gotten some toys, books and the boy's rocking chair out of the attic for Kamry to play with while she was here. Nathan's grocery cart was the biggest hit! Many TY beanies had been rolled in that cart, now Peppa and George would get a turn. :O)

I get up early, and since Kamry's sleep schedule has changed and now wakes up around 8:00, we had our mornings together again and mommy got some sleep. Logan was hunting with Cameron today.

After breakfast, Kamry helped me make daddy's favorite jello salad (which she loved too)!



-Orange Fluff-
Mix 1 -8 oz. cream cheese (softened) with one small orange jello (dry). Add 1 small can crushed pineapple (drained) and 1 -8 oz. cool whip. Mix together. It is super easy but so good! I rarely make it but always do when Logan is home.

We also had Cream of Crab Soup and Balsamic Chicken Salad for dinner tonight.

We rode out on the cart and stopped in to see Kayla and Rowen, then they came down for dinner.



Logan had a great time hunting and they got a few for the freezer.

(The beard came off tonight!!!) yaaa!

Kamry took a nap and Kayla stayed for awhile but skipped dinner---I cooked a goose for our dinner today! :O) Gran and Pop ate with us too. Everyone LOVES goose/duck dinners around here (except Kayla).
