Blue Apron Review: Beef Albondigas, Squash, & Pan Con Tomate


Beef Albondigas w/ Sauteed' Summer Squash & Pan Con Tomate

*This was the last of 3 Blue Apron meals and one of my favorite meals so far!! I would never have thought to put raisins in meatballs (and I'm usually not a fan of raisins either), but they added a sweetness to balance the tomato base of the sauce. DELISH!!


Ingredients:

10 oz. ground beef
1 small baguette
2 cloves garlic
1 tomato
1 yellow onion
1 yellow summer squash
1 bunch fresh parsley
2 T. golden raisins
2 T. tomato paste
1/4 cup panko breadcrumbs
2 tsp. albondigas spice blend 
(smoked paprika, ground cinnamon, ground coriander, dried oregano, & dried basil)

I love this idea for a water challenge. I don't "love" water, but try to drink it (especially in this heat!). I plan to give this a try! :O)

RECIPE:
1/2 frozen banana, 1 cup peaches (I used fresh), 1/2 cup almond milk, 1/2 cup vanilla or peach yogurt, and ice. Blend; top with whipped cream and coconut.

We spent LOTS of time in the boat while Peter was home. We went to Smith Island for lunch (that crab cake -YUM!!), went for a few boat rides, took the boat to Crisfield twice, and even went fishing! :O)

Blue Apron Review: Spicy Ponzu-Glazed Catfish


Spicy Ponzu-Glazed Catfish 
w/ Zucchini, Garlic Basmati Rice, & Ginger Peanuts

*thoughts on catfish- not a fan of the name, therefore, never tried it before. BUT, it was delicious!! The flavors in this dish blended well. The left-overs were just as good as the first day. YUM!

Ingredients:

2 catfish fillets
3/4 cup white basmati rice
3 cloves garlic
2 scallions
1 zucchini
3 T. peanuts
3 T. ponzu sauce
2 tsp. black & white sesame seeds
1 T. sambal oelek
1 T. sesame oil

Blue Apron Review: Chicken & Buttermilk Biscuit Sandwiches


Chicken & Buttermilk Biscuit Sandwiches 
w/ Shredded Collard Green & Carrot Slaw

I really liked the chicken biscuit w/spicy may, but the collard green slaw didn't appeal to me. I much prefer cooked collards to raw, so on day 2, I sauteed' the "slaw" and it tasted MUCH better!!


Ingredients:

2 boneless skinless chicken breasts
1 cup buttermilk biscuit mix
1 carrot
1 clove garlic
1 bunch collard greens
2 T. butter
2 T. mayo
1 T. honey
hot sauce - to taste
1 T. vinegar
1/4 cup buttermilk

Kamry - 3 months


  

I know people say this all the time, but seriously, how can time go by so fast and how can Kamry be 3 months old already!? Time, please slow down!! 
She now weighs 9 lbs. 14 oz.!!! She is a little piggy!!! She drinks 4 - 4 oz. bottles (breast milk fortified with formula powder) along with nursing every 3 hours or when hungry. She just moved up to size 1 diapers and 0-3 and 3 months clothes. She is a very good baby and is very content. She sleeps better now too. She wasn't very satisfied in her bassinet, and had her days and nights mixed up for a few weeks, but Gran and Pop gave her a pack -n- play a few weeks ago and she now seems to be on track with her sleeping. She still loves her room and will nap in her crib.

weekend catch-up....

7/23/16 - Saturday

We headed back to Marion to spend the weekend! Logan and Lindsey were going to a wedding, so we were officially on babysitting duty! :O) :O) We decided to repeat the ride up in our boat, but this time, we took a new route. It was a tad choppy, so we headed toward the Club House and went through Broad Creek. Check another place off my "I've never been here before" list!




They left around 3:00 for the wedding which was about 2 hours away. We were glad they were able to spend some time just catching up with friends and enjoying a night out together. We were more than happy to watch miss Kamry! ;o)





I sent Lindsey pics while they were gone, and I think she made out better than she thought being gone from her. They got home around 2 a.m. and I turned in, since I planned to do morning duty so they could sleep.

7/24/16 - Sunday



Pop-Pop is a bit obsessed too!!!


Peter fixed boiled fish (he caught a few trout fishing this week), biscuits and cheese melted in their coffee. This has always been one of Logan's favorites. It was a tradition with Peter and his Dad too. :O) Of course, the time has changed on when it is eaten.....Peter grew up eating it at 6 a.m. on Sunday morning....Peter finally got Logan up to eat at almost 1 p.m. :O) I don't blame them though to take advantage of sleep when they can get it!! :O)



We decided we needed to get going around 3:00 to avoid running into any stormy weather. We said our goodbyes sadly, since it would be a few weeks before we would get back again :O( but we thoroughly enjoyed our weekend with Logan and Lindsey and our time with Kamry!!

our dryer...less than a year old...conked out on 6/18...long story short (but MANY phone calls to Samsung and Lowes later)....we have a new dryer a whole month later!!! 


7/20/16

We both had eye doctor appointments scheduled today, so we decided to make it a fun day! Peter wanted to go in the outboard since the weather was so nice and we wouldn't need to watch the clock all day. The ride to Crisfield was gorgeous!! :O)




After some shopping and lunch at Panera......

[Peter got the "new" Lobster Roll & Summer Corn Chowder
and I got the Strawberry Poppy Seed Salad w/ Chicken & the Napa Almond Chicken Salad.] YUM!! 
 ....we spent some time with our sweet girl!! :O)





We hated to say goodbye, but knew we would be back this weekend.

The ride back was gorgeous!!!
