Feelin' Fall-y

I was still in summer mode when this rainy nor'easter came through yesterday and got me in the mood for all things pumpkin!!! It's like it was saying good-bye summer---hello FALL! I really hate to see this summer come to an end and am beginning to question if FALL is still my favorite season. Anyway, I had a craving for something pumpkin-y, so it was the perfect time to try Pioneer Woman's recipe for PUMPKIN PIE!!!

~Pumpkin Pie~

2 cups pumpkin
1 14 oz.can sweetened condensed milk
2 eggs
1 T. vanilla
1/4 tsp. ground cloves (I used nutmeg)
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/2 cup packed brown sugar
1 unbaked pie crust

Pioneer Woman: Potato Skins & Chicken Satay

Potato Skins

Russet Potatoes
Kosher Salt 
Grated Cheddar Cheese
Green Onion -or any 
Sour Cream

Wash potatoes and rub with oil. Salt well. Bake for 40 minutes at 350 degrees. Cut in half lengthwise and scoop out middles. Brush inside skins with melted butter and put back in oven for 5 minutes then brush outside skins with butter and bake 5 more minutes or until crispy. Add a little cheese to each skin and put back in oven until cheese melts. Serve with crumbled bacon, onion, and sour cream. 

Grilled Chicken Skewers w/ satay sauce

Make satay sauce: 
1/4 cup peanut butter
1/8 cup soy sauce
1/8 cup honey
juice from 1 lime
dash crushed red pepper flakes
1 tsp. ginger (minced fresh or powder)

Put chicken on skewers and grill 3-5 minutes on each side or until cooked. 
Serve with a variety of sauces including satay sauce, BBQ sauce, A-1 sauce, honey mustard, or your favorite dipping sauce.

I really like this!!!!! I want to work on being less worried about my house looking "perfect", and focus on enjoying having friends and family stop by, even if there are dishes in the sink (or worse)!!! :O)

-summer daze-


Being out on the boat is one of my favorite things about summer, It is so peaceful! I love the quiet, the beauty, the fresh air, the sunshine, and some time alone with Peter. I'm going to miss this most once cold weather comes and it's time to pull the boat up. Until then, we will soak up all the summer sun we can out on the water! 

A bonus to our already great day.....

Summer Kamry Visits!

I went over on the morning boat and spent the whole day with Lindsey & Kamry while I waited for Peter to crew change. We hung out and had the best time!

She acted so sweet to Pop-Pop when he arrived! <3

Kamry had been sick with a fever all week, so we really wanted a little visit! Lindsey sent this pic yesterday saying she had been asking for NANA! <3

So, when Peter asked if I wanted to go to see her after work today, of course, I did!! We took off around 2:30 in the boat and headed to Crisfield and spent 3 hours with her and Lindsey!! :O) She was feeling much better and seemed to be back to her sweet, happy, self again. 

We had the best time, just playing and hanging out. Kamry is soooo close to walking! She can walk her walker all over the floor, turn around with it and go the other way. She can stand up from sitting in the middle of the floor, but doesn't quite have the courage to take steps, but so, so, close! 
We said our goodbyes and stopped to picked up subs at Carry Out for dinner on our way back to the marina. It was a little choppy, but well worth a little visit!! Can't wait to go back!! xoxo

WOW!!! Just WOW!!
I was hostessing on Monday, but Cameron brought glasses by so we could check it out! It was soooo cool and I was so glad I got to view it (at 3 different stages).
I had guests who flew in from CT for a few nights and flew out to Triple Tree in S.C. on Monday morning to get the best spot possible to view the eclipse. They landed on a grassy field along with hundreds of other fellow pilots. They showed me their pictures the next day before flying back home....A-M-A-Z-I-N-G!!!!
Here's a LINK I'm convinced that there are people who really enjoy life to it's fullest!!! I'm hoping they will share some of their awesome photos with me!

We got Nathan & Kayla moved back ("losing" Weasley and all) but now we are hoping to get them moved in the house asap....clock ticking.....
