Then there are the gifts that money can't buy. Nathan cooked me a birthday dinner! :O)
Meatloaf, Criss-Cross Potatoes, & Broccoli
Here are the recipes:
MEATLOAF
2 eggs
2/3 c. milk
3 slices bread-break into pieces
1/2 onion - chopped
2 carrots - peeled & grated
1 c. shredded cheddar cheese
1 t. parsley
1 t. salt
1/4 t. pepper
1-1/2- 2 lbs. ground beef
TOPPING:
1/2 c. tomato sauce
1/2 c. brown sugar
1 t. mustard
INSTRUCTIONS:
In a large bowl, beat eggs, add milk and bread. Let stand. Add onion, carrot, cheese, and seasonings to egg mixture. Add beef and mix well. Form into loaf and put in shallow baking dish (line with foil). Bake @ 350 degrees for 45 min. Combine sauce and pour over meatloaf (spoon off any grease, before adding sauce). Bake about 30 mins. more or until no longer pink. Let stand 10 mins. before serving.
CRISS-CROSS POTATOES
Wash potatoes. Cut in half lengthwise and make a criss-cross pattern in each half (do not cut all the way through). Put in shallow pan and brush with melted butter. Sprinkle with garlic powder, salt, pepper, and paprika. Bake @ 350 degrees for 1 hr. Serve with sour cream.
