A taste of summer~Key Lime Pie

Relax & Surf Sunday
I bought a cookbook while in WDW in February that is full of some wonderful dishes served at the park & resort restaurants. I tried one of the recipes today and it was d-e-l-i-s-h!!! The recipe is for Key Lime Pie , served at Olivia's at the Old Key West Resort. We've never been to the OKW, so we haven't dined at Olivia's as of yet. Hopefully, we'll get a chance to eat there on one of our future trips. The resort looks awesome and the food sounds wonderful. I've heard great things about the Key Lime Pie, but in the meantime, I did the next best thing and copied it here at home.
Key Lime Pie
5 egg yolks
1 (14 oz.) can sweetened condensed milk
2/3 cup lime juice
1 9-inch prepared graham cracker crust (I made my own)

1. Preheat oven to 350.
2. Gently whisk egg yolks together in a bowl; do not let foam. Stirring constantly, slowly blend in condensed milk and lime juice.
3. Pour the mixture into prepared crust and bake for 12-15 minutes or until set.
4. Remove from oven and cool to room temperature on a wire rack. Chill.
5. Serve chilled; cut into wedges. Serve with whipped cream.
Yield: 8 servings

1. Vow renewal ceremonies-yay or nay? NO WAY!!! This is coming from someone that didn't want a big, fussy wedding 28 years ago. My small, simple wedding was just perfect....one ceremony was a plenty for me!! :O)
2. What sound/s annoy you the most? my alarm clock, or someone blowing their nose {especially in a restaurant} are my top 2.
3. If you had to pick, would you have only all boys, or only all girls for kids? BOYS ROCK!!!! :O)
4. Do you believe in alternative medicine? I'm not really sure how I feel about alternative medicine, as I've never personally had to use it. But, I can't say that if the doctors had tried everything they could to help me and nothing worked, that I wouldn't consider giving alternative medicine a try.
5. Would you take a family members children and raise them if they needed it? Absolutely!!! :O)

Look what I found....

Last fall, after Halloween, I ditched our pumpkins in the backyard. Normally, I put them out with the trash, but for some reason I kept them. I put them out back behind the picket fence and forgot all about them. Since Nathan does most of our yardwork, I hadn't noticed what was now growing back there. Imagine my surprise when I found this ...... My question is.....isn't it too early for pumpkins? Or will it take a couple of months for them to appear? Can you tell I've never grown my own pumpkins before? I am sooooo excited to see how many I actually get. I'll keep you posted!
