You cook it how long????

We had one of my most favorite meals today for dinner and it had been quite a few years since the last time I cooked it. Yesterday, as I was picking up some flowers in Super Giant, Peter was browsing through the seafood section and came across some freshly caught shad fish. Now, I just happen to have an awesome recipe for Baked Shad {thank you Norma Ray!!}, so Peter bought one and I cooked it today. If you are a fish lover this recipe is the best you will ever eat! If you are familiar with shad though, you know that it has a gazillion lots of bones, so the secret to this recipe is to bake it for 6-7 hours on a low temp. until the bones disappear! A fisherman friend of ours used to give us a shad every spring, but he has since passed away, so I was very happy that Peter came across these at Giant yesterday. I'll be sure to check back again next spring, hopefully, I won't have to wait so long to have my favorite meal again! 
Baked Shad
Line a baking pan with foil. Place fish in pan and cut 4-5 slits in fish. Thinly slice 5-6 potatoes and 1 large onion and place around fish. Salt and pepper well, and you can also sprinkle a bit of Old Bay seasoning if desired. Drizzle with olive oil and add about 1-1/2 to 2 cups water. Sprinkle with flour for thickening. Cover tightly with foil. Bake @ 300 degrees for 6-7 hours. Check every 2 hours to see if it needs more water. {this is how it looks before going in the oven}

Looks very yummy, but we don't have "shad" in nearby supermarket. But I think I can try using different fish.
