We made Peppermint Mocha Iced Lattes with sweet cold foam 

& a splash of peppermint bark syrap 🀀

Christmas Menu 2021 & Recipes

                                                               Christmas (Eve Eve) Dinner πŸ½πŸŽ„

We decided to have our big family dinner today and we did a repeat of last year! 
This Christmas Dinner menu is our new holiday meal!
Delish!! 🀀 

Christmas Dinner Menu 

Prime Rib 

Creamy Horseradish Sauce

Roasted Garlic Mashed Potatoes

Asparagus Bundles

Sauteed Mushrooms

Rolls

Strawberry Pretzel Salad


PRIME RIB/STANDING RIB ROAST


Ingredients:

  • 6-7 lb Standing Rib Roast 
  • 3 large garlic cloves (cut in half)
  • ¼ cup extra virgin olive oil
  • 2 teaspoon chopped fresh rosemary
  • 2 teaspoon chopped fresh thyme (I used dried)
  • 1 tablespoon salt
  • tablespoon pepper

Instructions

  • Preheat oven to 450 degrees F
  • Massage roast all over with olive oil
  • Place roast, fat side up, in a shallow roasting pan with rack.
  • Cut 5 slits in top of meat and insert small clove of garlic
  • Mix remaining seasoning ingredients in a small bowl, then pat on roast until the top is evenly covered
  • Place oven-safe meat thermometer in the center of the roast (Set thermometer for 135 degrees F for medium-rare, 145 degrees for medium) away from the bone. Make sure that it's inserted deep into the middle of the roast - or check after an hour then 2 hrs (we cooked ours a total of 2 hrs 40 minutes for medium -perfect!!

    CREAMY HORSERADISH SAUCE
  • prepared horseradish - to taste (I used about 1/4 cup)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh squeezed lemon juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons Worcestershire sauce
  • Few drops Tabasco sauce


  1. Mix all ingredients in a small bowl and refrigerate until needed.

ROASTED GARLIC MASHED POTATOES


  1. Preheat oven to 425 degrees F.
  2. Slice off the very top of the garlic head. Drizzle head with olive oil and wrap in foil. Place on a sheet tray and bake until tender and fragrant, roughly 35 minutes. Remove from the oven and let cool. Remove the cloves and mash with a wooden spoon.
  3. Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil. Cook until fork tender and drain. Mash the potatoes until smooth.
  4. Meanwhile heat butter and cream until butter melts. Add the roasted garlic and potatoes and mash all together.
  5. Taste and season with salt and pepper. Serve immediately.
