Pioneer Woman: Key Lime (or Lemon) Pie

Peter usually asks for Lemon Meringue Pie for his birthday (his Nanny's recipe). I noticed that Pioneer Woman's Key Lime Pie is almost the exact same recipe, so for June, I made a twist on PW/Nanny's pie recipes! 


Creamy Lemon Meringue Pie
(Nanny's recipe)

3 egg yolks
1 can sweetened condensed milk
1/2 cup lemon juice


Key Lime Pie 
(Pioneer Woman's recipe)

1 can sweetened condensed milk
2 egg yolks
1 T lime zest
1/2 cup lime juice

Graham Cracker Crust

15 whole graham crackers (the 4 section rectangles)
1/2 stick butter (melted)
1/4 cup sugar

In food processor, pulse crackers into fine crumbs. Add butter, and sugar. Mix together; pour into pie plate. Press into shape. Bake for 5 minutes at 350 degrees. Cool.

Make filling and put into cooled crust.

I used the 3 egg yolks, milk, and lemon juice, and made PW graham cracker crust.
PW recipe calls for whipped topping if desired, but Peter loves meringue on this pie.

Meringue: 

4 egg whites

beat until peaks form

slowly add in 1/2 cup sugar (1 T at a time)

beat until stiff peaks

put on top of filling and seal.

Bake for 15-18 minutes.

slow down you've hit the speed limit!

HAPPY {55th} BIRTHDAY PETER!!!

crew change day & a visit with this little cutie to start off the birthday celebrating!


Peter pretty much always asks for Lemon Meringue Pie (his Nanny's recipe) but this year, I tweaked it a little using Pioneer Woman's recipe! He couldn't tell the difference! Recipe {HERE}
Yummmmmm.....


Peter got lots of cards and online birthday wishes, gift cards and $$. I ordered him Jay Fleming's "Working the Water" book that he's been wanting for awhile.

- we had planned to go for a boat ride, but it was a bit too breezy.

What a great day!! So glad he got home for his birthday.....and the 4th of July next week!!!! :O)

Patriotic/Summer Coffee Center

This verse really hit me. There has been so much publicity lately concerning our island's erosion problem...through tv, reporters, journalists, even the president....but it hit me that while hopefully something positive will come of this publicity, we need to trust and remember what God has promised us...HE is with us...HE will watch over us...HE will not leave us until HE has done what HE has promised. It's so funny how you can read a verse over and over, then it's like you read it again, and it really speaks to you and gives you peace.

*pineapple ice*

Checked off the first of 15 Summer Bucket List items! 
This is one of Peter's favorite summer treats!


PINEAPPLE ICE
(recipe from Hedy B.) 


1 large can pineapple juice
1 can water
1 large can crushed pineapple (undrained)
1 can water 
1 large can frozen OJ
1 can water
juice of one lemon
2 cups sugar (+ sweeten to taste)

Mix well, pour into plastic containers and freeze. 
When ice crystals start to form, stir 2 or 3 times while freezing.

Home Chef Review: Chicken & Roasted Beet Salad


Meal #3 - Chricken & Roasted Beet Salad w/ goat cheese and pistachios

I was excited to try this one, since I've discovered my new love for roasted beets. I first tried them at The Shark restaurant [their Beet & Berry Salad is one of the best things I've ever eaten!!!], then I tried them again in another of my subscription box meals- Plated. 

Beet & Berry Salad w/Grilled Swordfish - The Shark

Pan -Seared Salmon w/ Beet Risotto -Plated

This meal was ah-mazing!!!! My favorite of the three, yet all three were delicious! I will keep this subscription active for awhile and give another shipment a try in the near future!

INGREDIENTS:
1 shallot
3/4 oz. roasted pistachios
8 oz. golden beet
8 oz. red beet
2 boneless skinless chicken breasts
1-1/2 oz. champagne vinegar
1/2 oz. honey
4 oz. baby arugula
1 oz. goat cheese

Home Chef Review: French Mustard-Thyme Butter Pork Chops


Meal #2 - French Mustard-Thyme Butter Pork Chops w/Kalettes

I love pork...and greens....so this one was definitely a win!!! 
The fresh thyme butter was a great touch to the already delish meal!

INGREDIENTS: 
3 T. butter
6 oz. kalettes
1 red onion
2 cloves garlic
3 sprigs fresh thyme
2 boneless pork chops
2 tsp. grainy mustard

~hello summer~

I finally found a cool(er), free morning to do a little work on the patio. It was a MESS! I've been trying to get to it all spring and now that it's officially summer and the fourth of July is right around the corner, I knew I had to get out there and make it look pretty! I want more plants and a rug, and some lights, but for now, at least it's weed free and prettier than it has been all year.

Peter wasn't thrilled that I put up the umbrella, as he thinks it might scare away the martins he has finally gotten to nest!! Well, they don't care a bit for it (thank goodness!!!).
