The Simple Woman's Day Book: March 2016

For Today...Monday 3/28/16

Outside my window....today was gorgeous!
The temps got up to 70 - a true spring day!! :O)

I am thankful....for the little things!

I am wearing....jeans and my "Believe There Is Good In The World" tee

A favorite quote of the day....

Nathan's motto to live by! :O) :O)

In the kitchen....after months of eating junky or barely cooking for myself while Peter is away at work, I took the plunge today and signed up for Blue Apron!!! Today's salmon Lean Cuisine was what drove me over the edge to do something about the way I am eating! It was the nastiest thing I ever ate! :O( I have read rave reviews about the meals from Blue Apron, and since I LOVE to cook, I think it is the answer to my dinner dilemma. My first shipment is scheduled to arrive next Tuesday! I signed up for the 2-person plan, but with Peter being gone, this will give me 6 meals. You can skip any week it doesn't work for you and you can cancel at anytime. I will do a full review once I try all the meals. I may or may not do it the weeks Peter is home, since I'm usually cooking for him, Nathan/and Kayla too.

From the board room (Pinterest)....I am giving Lindsey a baby shower on May 14th, so I am busy planning! I found some really cute baby girl ideas that I love! It will be very pink & very girlie!

One of my favorite things....I've probably watched it a 100 times, but when Julie & Julia comes on, I watch (even when I'm supposed to be Spring cleaning!). It's about three of my favorite things: Julia Child, cooking, and blogging! "O)

Easter 2016

Peter and Nathan went back to work on Wednesday, so I spent another holiday alone! I bought homemade Easter Eggs for them to enjoy before they left and sent a gift to Logan, Lindsey, and the baby. I can't wait to start enjoying holidays and special occasions with children again. :O) Don't get me wrong, I love doing things with my grown up family, but there is just something about babies and children that make things even more exciting and fun!

Mom and Dad invied me to dinner on Saturday and afterwards, Mom and I went to the Easter Egg Hunt held in the parsonage yard. I can hardly wait until next year, when our little bunny will be joining the fun! :O)

It was raining, so for the first time in several years, I missed the Sunrise Service, but went to the morning service at church.

I went out to eat afterwards at Lorraine's with Mom, Dad, Liz, and Mitch. Turkey dinner...YUM!

I didn't end up decorating for Easter this year, except for some forsythias on my table and front door....

No tulips yet, but lots of daffodils blooming....

Happy Easter!!!!

Our Disney Vacation - Day 5 (FUN DAY - part three)

Day 5 - Monday 3/07/16 - Old Key West & Disney Springs

It was HOT today! We headed back over to the boat dock, but stopped in Trail's End to get a soda. We ordered two Cokes, and when we went to pay, they said no charge. Okay...Thanks! :O) We had to wait a few minutes for the boat, but were soon on our way. Our boat captain was in training (and you could tell) - but we made it safely back.

We had a dinner ADR at Olivia's in a few hours, but decided to jump on the bus headed to Old Key West now anyway, since we wanted to check out the resort.

We checked in and chose a table inside, but wish we had eaten on the deck because it was a gorgeous evening to dine outside.

The rerstaurant was pretty empty, but the deck was full.

The bread was similar to the Pineapple Bread at OHana - so it was yummy!

We both got the house salad....again, yummy!

...and for our app, we shared the Conch Fritters - with Key Lime-Mustard and Remoulade...and again...YUMMY!!!!!

Peter got the Grilled New York Strip Steak - served with mashed potatoes, green beans, carrots, and a ragout of mushrooms, tomatoes, and onions....

I got the Seven Mile Sea Scallops - Marscapone Polenta, asparagus, Prosciutto Crisp, and Tomato vinaigrette ...

For dessert, Peter got the Banana Bread Pudding Sundae - served warm with Bananas Foster topping and Vanilla Bean Ice Cream....

I got the Key Lime Tart - with mango and raspberry sauce to go....

This entire meal was absolutely delicious!! We won't hesitate to return!

$85.17 or 2 TS credits + $27.70 OOP + cash tip

I suggested taking the boat over from Old Key West to Disney Springs (another new-to-us thing). The sun was setting and it was a gorgeous ride! :O)

I love all the changes they have made at Disney Springs (what used to be Downtown Disney). It was buzzing with people, shopping, restaurants, and LOTS of live music. Tonight we would stay and listen to a sax player and a Latin band/ dance party! LOVE!!

We finally called it a night and caught the bus back to our resort. We had been on the go since morning, but had an awesome day!! :O) I ended up doing laundry that night (because I'm one of those weird people who can't stand bringing home suitcases of dirty laundry!).

Our Disney Vacation 2016 - Day 5 (FUN DAY - part two)

Day 5 - Monday 3/07/16 - Horseback Riding @ Fort Wilderness

Peter wanted to do the horse trail again this year, so we headed to Fort Wilderness after breakfast. We took the monorail back to Magic Kingdom, then went over to catch the boat to Fort Wilderness.

We had a short wait until our time to ride, but we headed over to The Circle D Ranch to hang out. I got pics before and after, but wish I could get some during the ride, but we have to store our phones, cameras, and bags in a locker while we ride.

Peter (again) got the good horse, I got Mick, the ornery one!!!!! I knew before we even left the pen that he was going to be stubborn! Needless to say, the CM in the back with me, had to finally get off of her horse and put a rope on my horse and lead me through the entire trail! :O( I was a happy camper though, and just went along with it, but I expected Mike to do a Hi-O Silver move and send me flying off at any moment! LOL

cost: $92.00 (45 minute ride)

side note: two days later we got a call from the ranch saying they had credited our account for my horse ride ($46) due to Mick's bad behavior! ;o)
