hooked on freezer cooking!!!

Yesterday, we tried our third freezer meal {enchiladas} and it was AWESOME! I am officially hooked on this whole freezer cooking concept! I didn't get a picture, so I found one on Pinterest that looked similar.

I put the thawed enchiladas in the oven for 45 minutes, cooked a package of taco flavored rice and made sweet tea.....that's it-dinner ready in exactly 7 minutes- the time it took to prepare the rice.

Then came the big test, how did it taste? First, I have to say that Peter isn't a huge fan of Mexican food, he's not thrilled at all when we have taco night. But, he absolutely loved these! We all did! I served them with the taco rice, sour cream, and salsa. I cooked 7 of the 12 enchiladas and it was more than enough for the 3 of us, plus there's another pan left in the freezer for another meal. I spent a little time yesterday reading through several more blogs and found LOTS of awesome looking recipes for more freezer cooking. Let's just say......I'm hooked! :O)
