5 on Friday: Good Things

{GOOD THINGS}

1. Logan surprised us yesterday by popping in for a few hours. Peter was at work so Logan stopped by there to see him, then spent the rest of his time here with me. It was so nice to see him and get caught up a little. :O):O):O)

2. Just got off the phone with Nathan who is on his way back from Maine. His boat is anchored in NY harbor tonight. It's always good to hear from the boys when they are away at work, and even better when you know they are happy & safe. :O):O):O)

3. The Bears played a good game against the Giants last night and won. {{{they are now 4-2}}}
 The next time they play we will be at the game!!!!! :O) :O)

4. I had a major sweet tooth last night and had nothing in the house! I ended up making sugar cookies.....


It took me 2 hours to make them and I only ended up eating 2 cookies! LOL
I actually cheated a little on the cookie part

but made the Best Sugar Cookie Icing Ever and it turned out great!!
Here's the recipe: {I cut this in half, since I made a small batch}
  • 4 cups powdered sugar
  • 6 tablespoons whole milk
  • 6 tablespoons light corn syrup
  • 1 ½ teaspoon almond extract

  •  In a large mixing bowl, whisk together powdered sugar and milk until smooth. Add in corn syrup, and extract.  Whisk together until the icing is shiny and smooth and drizzles off your whisk easily. You will use this to fill your cookies. Take out a little icing in a small bowl: whisk in a little more sugar to thicken. Fill a piping bag (or a Ziploc with the corner snipped) with your thick icing. Make an outline on the outer edge of the cookie. Let it harden. Carefully squeeze your thin consistency icing onto your cookie. Do not put too much. This icing is runny and will spread out. Let cookies sit for awhile so that icing will harden.
    5. The weather has been dreary since I finished up with work on Monday. I really don't mind though, it's perfect weather for blogging and Pinterest, and catching up on Parenthood!
