Cauliflower Pizza Bites

Well, I'm still chugging along with this diet.....I'm doing a decent job of sticking to the low carb options, but after last week, my diet took a huge test. Last Sunday was not only Father's Day, but Peter and I celebrated our 29th anniversary! Of course that called for going out to dinner! Peter, Nathan, Mom, Dad, & I had a great seafood dinner at F.Corner. I managed to refrain from dessert, but I don't think my meal was as low carb as it should have been. I didn't have as much will power on Weds., I just had to sample Nathan's birthday cake, which was D-E-L-I-S-H! I've stuck pretty close otherwise, to the low carb choices, but I have added a few things in for variety like low carb yogurt and fresh fruit:blueberries, cherries, strawberries, or blackberries for lunch. As of today, I've lost 12 lbs......8 more to go! I think I can do this!

Last week, I tried a new recipe, Cauliflower Pizza Bites.

Ingredients

2 cups grated cauliflower

1/4 cup egg whites

1 cup 1% Cottage Cheese

1 tsp oregano

2 tsp parsley

1/4 tsp garlic salt

pinch black pepper

dash hot sauce

36 slices pepperoni

Directions

Preheat oven to 450. Spray muffin trays with cooking spray.

In a skillet, saute' grated cauliflower in 1 T. butter - about 5 - 8 minutes. Transfer to a bowl and let cool.

Blend remaining ingredients in food processor until smooth.

Pour blended ingredients into the bowl with the cauliflower and stir to combine well.

Spoon mixture into muffin tins. Press down firmly with a slice of pepperoni.
Bake at 450 for 25 - 30 minutes, until golden brown.
Remove from the oven and let sit in the pan for about 5 - 10 minutes before removing.
I used pizza sauce for dipping.
Nutritional info, according to Fitday, is 297 calories, 21 carbs, 45 protein - for the entire recipe. If you divide that by 36 servings - 8.2 calories, 0.5 carbs, 1.25 protein per bite.
Now, for my review. They were okay, just okay. I was really expecting them to have more of a pizza taste {I am a huge pizza fan, and I'm really missing it!!}, this recipe didn't satisfy my craving for pizza at all. It was a change from the regular low carb choices, but again, they were just okay. What will keep me from probably ever making them again, was the clean up! I had to soak the muffin tins forever, then scrub and scrub and scrub to get them clean. UGH!
