BBQ BABY BACK RIBS
[Instant Pot Recipe]
1. remove the membrane from the back of the ribs by grabbing with a paper towel and pulling down, then cut the ribs in half.
2. pour 4 cups apple juice + 1/2 cup apple cider vinegar into instant pot and press "saute". The cooker will turn on and after a few minutes start to steam.
3. add ribs to pot, meat side down. Seal cooker and close steam valve.
4. press cancel, then manual, then press +/- to set time to 30 minutes.
5. when the pressure cooker is done, do slow release for steam (let sit 10 minutes before opening valve).
6. have a rimmed sheet pan ready to put ribs on (meat side up). Baste with bbq sauce (bottled or homemade), and put in 400 degree oven for 15 minutes (I also broiled 5 more minutes to char).
For sides, I did roasted potato rounds and asparagus.
What a delicious Valentine's Day dinner!!
