Menu Plan Monday: May 4-10





Monday 5/04 - Tacos and Mexican Rice
(Cinco de Mayo - a day early!)

Tuesday 5/05 - Steamed Crabs
Peter bought a half bushel of crabs that we (me, Peter, Nathan, and Kayla) had for dinner. Yummy!! Then, I picked out enough meat from the leftover crabs to make seven big crab cakes for dinner tomorrow.
 
 
Wednesday 5/06 - Crab Cakes, Deviled Eggs, & Baked Beans
 
 
 
Thursday 5/07 - Order Out
 

Friday 5/08 - bbq chicken and onion rings
 
Quick & Easy BBQ Chicken for Two - I boiled 4 pieces of chicken until almost done in salted water on top of the stove. In the meantime, I made this quick and tasty bbq sauce in a skillet: Saute' half a chopped onion and 1/2 cup chopped celery in 2 T butter until tender. Add 1/2 cup bottled bbq sauce, 1/2 cup (or more) ketchup, 1 T mustard, 1 T worcestershire sauce, 2-3 T brown sugar, 1/4 t. pepper and whisk together. Add chicken pieces to skillet and simmer for 15-20 mins. Delish!!

 
Saturday 5/09 - pork with onion gravy, rice, and asparagus
Another super easy dinner-for-2....In skillet, heat 2 T oil and brown chops seasoned with salt & pepper. Remove and add to skillet: 1 pkg. onion soup mix and water (about 1-1/2 cups) - whisk together. Return chops to pan and simmer on low about an hour. Remove chops and thicken gravy with a little cornstarch. Very tasty!!

 
Sunday 5/10 - Order Out 
(and Strawberry Shortcake for dessert)!
I took very few food photos this week! We were very off-schedule this week since Nathan was away several days for school again (passed CPR!).
