Taco Salad

For Teacher Appreciation Week, we were in charge of lunch today. We decided on Taco Salad, Corn Bread, and Lemon Lush for dessert. I did one of the salads and thought I'd share the recipe. This is something easy to throw together for dinner and is sooooo good!
dressing hadn't been added when picture was taken
TACO SALAD
1 lb. hamburger
salt/pepper
1 can light kidney beans (drained)
1 head lettuce
1 medium onion-diced
1 large tomato-diced
1 cucumber-diced
8- oz shredded cheddar cheese
bag Doritos
bottle Catalina or thousand island dressing (we prefer Catalina)

Brown hamburger (salt/pepper to taste), drain. Set aside to cool. In large bowl, add chopped lettuce, onion, tomato, cucumber, beans, cheese, hamburger, and crushed chips. Mix together. When ready to serve, add dressing to taste, toss to coat well.
It's that easy, but oh so good! :O)
This salad can be made in advance, just cover bowl with plastic wrap and chill, but do not add dressing until ready to serve.
