Pound Cake
- 3 blocks butter or margarine
- 3 cups sugar
- 6 eggs
- 2 T. lemon extract
- 1 T. vanilla
- 3 cups flour
- 1 t. baking powder
- 1 cup milk
Combine butter, sugar, eggs, lemon, & vanilla in large mixing bowl. Mix on medium speed for about 20 mins (mixture should be creamy & fluffy). Combine flour and baking powder; add to creamed mixture, blend until just mixed. Add milk, beat 1 minute more. Pour into greased and floured tube pan. Bake for 1 hour or until pick comes out clean when tested. Loosen cake with a knife and turn onto a cooling rack. (This cake freezes well.)
I made this Pound Cake today - I kept half of it for us ( served w/ ice cream for dessert) and I shared the rest. I wanted to take something to a friend that recently had a death in the family so I wrapped the other half of the cake in clear plastic wrap and put it in a pink gift bag. I added a brown polka dotted grosgrain ribbon and a matching striped tag made from some scrapbook paper. For my friend who has a birthday today, I wrapped a few slices individually and put in a cute cardboard gift bag and added a package of french vanilla coffee.
