blackened fish + roasted parmesan zucchini

We tried two new recipes for dinner today......

Blackened Fish

fish fillets (we used trout)
3 T. melted butter
juice from 1/2 lemon
Old Bay w/ Blackened Seasoning

Heat cast iron skillet on medium heat. Add a little olive oil to pan. Mix butter and lemon juice together in a shallow dish. Dip each piece of fish in butter on both sides, then sprinkle with blackened seasoning on one side and add to pan (seasoned side down). Sprinkle other side with seasoning. Salt and pepper to taste. Cook 4 minutes on each side ( or until cooked through depending on thickness). Turn once.



Roasted Parmesan Zucchini

2-3 zucchini (wash, cut in half, then half again, making 4 wedges)
2 T. olive oil
juice from 1/2 lemon
2 tsp. minced garlic
3/4 cups freshly grated parmesan
salt and pepper to taste

Line baking pan with foil and arrange zucchini wedges (not touching).  Mix olive oil, lemon juice, and garlic. Brush on zucchini, salt and pepper, then sprinkle with cheese. Bake @450 degrees for 15 minutes, then broil for several minutes until cheese is golden brown.
