grilled corn w/ chili-lime butter


Memorial Day weekend is pretty much the kick-off for our season at the b&b, so that means a busy holiday weekend for me. I didn't get out in the boat, or to the beach, or even to the Memorial Day Service, but we did do some grilling for dinner. 
We had Tomato, Basil, and Garlic Pork Chops and grilled corn. 
Here is the recipe I used for the corn: 

Grilled Corn w/ Chili-Lime Butter 

1) Prepare Chili-Lime Butter (below).

2)  4-6 ears corn (I used fresh corn that had the husk/silk removed). We brushed each piece with the Chili-Lime Butter and wrapped individually in heavy foil. 
If using corn in husk: Remove large outer husks from each ear of corn; turn back inner husks and remove silk. Spread each ear with about 2 tsp. Chili-Lime Butter. Pull husks up over ears; tie with fine wire. Reserve remaining butter to put on corn when serving.

3) Grill corn on medium heat for 25 minutes, turning frequently.

4) Serve with remaining butter.

Chili-Lime Butter

1/2 cup butter- softened
1/2 tsp. lime zest
3 T. lime juice
1 tsp. chili powder

Mix all ingredients. Makes about 2/3 cup.

the wedding [part three]

The rehearsal dinner went very well. Everyone mixed/mingled until all the guests arrived. There was salad to start off the meal, then everyone's meal was brought out. I was able to pre-order for everyone off of the  menu, instead of buffet, which was nice. The food was delicious!!!

Next, dessert....we had 3 kinds of Smith Island Cake....Butterfinger, Orange, and Chocolate Chocolate....

Lindsey handed out a few gifts, including this gift for Peter and I. We love it!!!

Everyone started to leave, but the wedding party stayed behind for the live music.

Side Note: I highly recommend Riverside Grill in Pocomoke, MD. The manager, Corey Reeves was awesome to work with and made sure the rehearsal dinner was perfect. The food is delicious and the atmosphere is wonderful. Our two servers, a guy named Corey and Cassidy ( a longtime family friend) were great!!!! Several of the couples said they will definitely be going back for a "date night" or lunch. We have been eating there since Logan and Lindsey told us about it months ago. So, if you find yourself in Pocomoke....stop by Riverside Grill!!!

the wedding [part two]

We woke up Friday morning to pouring rain! Not what the bride wants to see on the day before her wedding.

The girls were headed to get their nails done, Peter and Nathan went to test drive a truck, Logan ran more last minute errands, and Kayla and I headed to Riverside Grill to decorate for the rehearsal dinner. It turned out pretty good. I really loved having the private dining room that opened up to the deck on the water.
It rained hard almost the whole time we were there, but began to clear off by early evening. By 5:00, it was gorgeous outside. We were even able to practice at the wedding site.

the wedding [part one]

[pre-wedding]
It was finally here.....just 2 days until the big day!!!! Peter and I arrived in MD on Thursday morning, and even though Lindsey, the wedding planner, and others had spent hours that week decorating for the reception and working on last minute things, there was still much to be done to pull everything together. Logan and Peter went to Salisbury to pick up the tuxes and make one last trip to Sam's Club. Lindsey, Danielle, and I spent the day working on the seating arrangements, making placecards, and finishing the programs, etc.

I took Lindsey, Kayla, Danielle, and Kara to dinner at Water's Edge, while the guys got together for dinner. Afterwards, we all met up at the fire hall to finish things up.

book club: week #4



Book Club Day (a little late!)
Week #4
Chapters 13-16

13) What was the worst home improvement challenge you've ever taken on? Was it worth it in the long run? Dad has done most of our home improvements over the years, or we've hired a local carpenter if the project was too big. I'd say our biggest challenge is putting things together, like a tv cabinet or even worse, a swingset. After this many years of marriage, we have a rating system for difficulty,  depending on how many quarrels we have while putting something together. It's always worth it in the longrun though.

14) Do you agree that it's sometimes your job to be your husband's cheerleader? When was a time that you encouraged your husband or helped them through something they were going through? It's always a wife's/husband's job to be the other's cheerleader.

15) How did having your first child affect your marriage? Did it change the dynamic in ways you weren't expecting? We waited 5 years before having our first child so we were both very ready for a baby. Naturally, it did change things since we now had a little one to consider at all times. Logan was such a good, happy baby., so adjusting wasn't all that difficult.

amazing....

WOW! What an amazing weekend this has been! I feel beyond blessed...my oldest son is married to the sweetest, most beautiful girl. Here are a few pictures.....lots more wedding posts to follow!!
