Week 2: Money Saving Challenge - 09.14.18


Week 2- I saved $94.00!!
So far, I've been knocking out the smallest amounts first, but now I'll move to completing rows, since the amounts are getting higher. I am finding this to be an easy way to save since I can actually see the amount I'm saving and have a goal. Two weeks in and I'm about 1/4 of the way through the first challenge card!!

Every Plate Review: Speedy Chicken Tacos

Speedy Chicken Tacos with Spicy Cabbage Slaw 

 Chicken Tacos with Spicy Cabbage Slaw from @everyplate was a win! 
I love subscription box meals and this one will definitely go on my try again list. 
The meals are only $5 a plate (plus I got a new customer discount). 



This box was only $23.93 for 6 meals!!! 
 I was skeptical about the quality because of the low price [about half the cost per plate of all the other subscription meals I've tried], but we really loved the first meal and can't wait to try the rest! The packaging wasn't as "fancy" as the others, but the ingredients were just as high quality. Even paying full price [I got a new customer discount this time], the price is very reasonable.

Week 1: Money Saving Challenge - 09.07.18


Week 1 - I saved $148! 

This week's savings came mostly from tips I had saved and I have started rounding up the amount I write the check for for cash back when I pay for things at the store. 

So far, it seems super easy to save, but I also started with the smallest amounts first.

I cashed in all the small bills for larger ones started an envelope in the safe. 

It's funny has fast it adds up and how motivating it is when you can actually see the savings!!

[Homecoming 2018]

Highlights/Memories from Homecoming 2018

Peter was finally home for Homecoming weekend and Logan, Lindsey, & Kamry came Friday evening until Sunday evening, so along with Nathan, Kayla, & Rowen I had the whole family home this year!! side note: [We took a little break from painting at the trailer - N/K/R were still in the rental house but in the process of moving over]. Julie didn't come, but Derek did! 

On Friday, I had work, but got home a decent time. I had chicken salad sandwiches, homemade mac & cheese, and a wing tray for dinner. Nathan & Kayla planned to take Rowen to the Homecoming, so we ate early. We picked up L,L, & K from the evening boat and after they ate dinner, we all headed over to the airport.






Kamry loved the "bouncy castle" 
[said in her perfect British Peppa Pig accent] LOL


Later that night, we had a dance party in the kitchen! :O)
Kamry's faves are Meet me in the Middle, Kiki Do You Love Me, and country songs Up Down and Sunrise, Sunburn, Sunset!

I had work, Logan & Kamry slept in then went out on the golf cart, and Lindsey went to Kate's bridal shower. Nathan and Logan played softball later that day.


For dinner, we had steaks and mushrooms on the grill, sauteed onions, baked potatoes, corn on the cob, rolls, and Kit Kat Cheesecake Brownies.

Madi joined us for dinner and played with Kamry and Rowen.

Rowen loves the farm set (which was his daddy's).

 Sunday was a lazy day....I had work, but everyone else slept in!

Little visitor, Freya and her mommy Haley came by to play along with Gran & Pop.


and Aunt Gina too!



We all met up later for dinner: Cream of Crab Soup, Cold Cut Subs, and Olive Garden Salad before Logan, Lindsey, and Kamry had to catch the boat back.

What a great weekend - full of family gatherings, visits from friends, A LOT of good food, and a ton of laughter!

Balsamic Garlic Grilled Mushrooms

Balsamic Marinated Grilled Mushrooms

  • 2 pounds mushrooms, sliced 1/4 inch thick
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce 
  • 3 cloves garlic, chopped
  • 1/2 teaspoon thyme, chopped
  • salt and pepper to taste
Mix marinade and add to mushrooms in a ziploc bag. 
Let marinate for 30 minutes then put on skewers. 
Grill 2-3 minutes per side. DELISH!

JANUARY 2026  HAPPY NEW YEAR!!  Life Lately....... January was a COLD month....snow, low temps, wind, and ended the month with a frozen cree...
