{the wedding} part one

Kayla wanted the church simple, mostly greenery and baby's breath with white ribbon, 
but wanted her bouquet to include pink peonies, which turned out beautifully.


Her rings are stunning! And I love the black band that Nathan chose.

Grilled Chicken Caprese Salad

~Grilled Chicken Caprese Salad~

SALAD:

2-3 boneless, skinless chicken breasts -marinate, grill, slice
1 avocado - slice
grape tomatoes - cut in half
fresh mozzarella balls 
romaine lettuce -cut in small pieces
fresh basil -chopped

DRESSING/MARINADE:

1/4 cup balsamic vinegar
2 T olive oil
1-2 T brown sugar (sweeten to taste-I used 2T)
1 tsp. minced garlic
1 tsp. dried basil
1 tsp. salt


Whisk together marinade/dressing. Pour 4 T. over chicken (in gallon ziploc bag)
and refrigerate until ready to grill. Store remaining dressing for drizzling on salad later. 

Grill chicken, then slice. 

Assemble salad: a bed of romaine, sliced avocado, tomatoes, mozzarella, grilled chicken.

Drizzle with dressing, garnish with fresh basil, and serve.

Martha & Marley Spoon: Steak & Potatoes


Streak & Potatoes w/ Green Bean Vinaigrette


This was the last of three meals from my Martha & Marley Spoon shipment and I saved the best for last!!! While the Shrimp Tortilla Soup and the Grilled Chicken Caesar Salad were yummy, this one topped them both!! The steak was simply prepared, just a little salt and pepper, but it was very tasty and melted in your mouth. The twist on classic potato salad was delicious as well, just a simple vinaigrette added to the potatoes and green beans. 
I think the thing that amazes me most about these meals is how so much flavor can come from such few ingredients! Who would think such an amazing meal could come from 2 potatoes, a little whole grain mustard, some white wine vinegar, a shallot, and a few green beans??? And the steaks.....they were delicious....and only salt and pepper as the seasoning.

Again, I can't say enough about these boxed meals. If you love good food and don't mind doing a little cooking, I recommend giving them a try! I have tried several, and this one is one of my favorites!

It's Peppa Pig!!!!


This little girls LOVES Peppa!!!! She loves her stuffed Peppa (and her little brother George), she loves to watch Peppa, one of her first words was Peppa, she even has her own Peppa bathroom....



so what do you do if you actually got the chance to see the real, live Peppa Pig????

You drive to the Delaware State Fair on the hottest day in July and meet Peppa!!!!

Lindsey said it was super hottttt but worth every drop of sweat to see this sweet girl's reaction to meeting her favorite pig!!! What a great memory!!! <3 <3 <3

Grilled Chicken Caesar Salad

Meal #2 from my latest subscription meal box Martha & Marley Spoon  was delicious! But then again, how can you go wrong with a Grilled Chicken Caesar Salad? My first meal, Shrimp Tortilla Soup didn't disappoint, so I was anxious to try another meal from the box. GCSS is often my go-to meal at a restaurant so I knew I'd love this, the only way it could have been any better is if I had cooked the chicken on the grill.


INGREDIENTS:
romaine hearts
dijon mustard
lemons
sherry vinegar
garlic
ciabatta roll
parmesan cheese
boneless, skinless chicken breast

11 weeks to go.....this was as far as I got on my countdown chalkboard last time!
It's still scary thinking back to Kamry's early arrival and the whirlwind months that followed.
Praying that Rowen is content to stay in mommy's tummy until it's time!! <3
